This past Sunday night, the Indian Student Association organized India Night. India Night was sold out and several audience members watched the entire show while standing.

It was absolutely worth it. There was so much energy during the entire show. There was a large variety of food, all of which was full of flavor. The performances were fantastic and so entertaining as well. The SDSU students are very fortunate to have such diverse and talented individuals here.

One of the dishes that was served at the event was Tandoori chicken. Its one of my all time favorites and from what I’ve heard, a lot of people loved it also. So here is an easy recipe for you to make this wonderful dish at home.

Try this:

– Substitute ginger powder and garlic powder with fresh ginger garlic paste.

– If you want to add a little kick try siracha (1 tbs) or chilli powder (1tsp) to your marinade.

The name tandoori comes from ‘tandoor’ which means clay oven. Traditionally, this dish was cooked in a clay oven but here is an easy way to fix this flavorful dish in your own home. If I can make this in a dorm kitchen, anyone one can make it at home.

Ingredients:

Chicken drumsticks 2 lbs

Plain yogurt 1 cup

Ginger powder 2 tsp

Garlic powder 1 tbs

Salt 1 . tsp

Lemon juice 1 tbs

Curry powder 1 tsp

Papparika/ cayenne pepper 2 tsp

Garam masala 2 tsp

– For chicken, I personally prefer skinless but you can cook it with the skin, too. You can also use chicken breast cut into cubes and thigh if you prefer. With a knife, make small slits in the chicken meat, and place in a bowl. Mix all the ingredients in a separate bowl to make the marinade. Use this marinade on your chicken and leave it covered and refrigerated for at least 4 hours. For the best result, marinate it over night.

– Baking: preheat oven at 450 degrees, and bake for about 20-30 minutes until done.

– Grilling: preheat grill on high and brush your grill with oil. Grill to get the initial char and reduce heat. Grill for another 10-15 minutes until done.

– Squeeze a fresh lemon on top of the chicken once you take it out of the oven or off the grill. Now, dig in.
